I like oatmeal for breakfast as much as the next gal, but sometimes it gets dull. This recipe is a twist on the boring oatmeal.
- 1 cup (100 grams) of quick oats
- 1 cup (100 grams) of raisins
- 3/4 cup (120 grams) of cake flour
- 2 eggs
- 1/3 cup (50 grams) of brown sugar
- 1/2 cup plus 1 tablespoon (120 grams) of vegetable oil
- 1/2 cup (100 grams) of milk
- 1 teaspoon of vanilla extract
- 1 teaspoon of baking powder
- 1/4 teaspoon of salt
The muffins are filling and have great texture. They are also excellent with a little salted butter. I'm looking forward to eating these first thing tomorrow morning.
what size pan did you use? they look delicious! mmmm. a perfect monday muffin.
ReplyDeleteUm, muffin pans pretty much only come in a couple of sizes. All I know is, mine fits in my oven. And yes, it is a perfect Monday morning muffin. :)
ReplyDeleteI'm gonna say it's a cupcake tin, not an oversized muffin tin (like for making Costco sized muffins)just because that's what size those papers usually come in.
